Have you met Joe?

Our Whisky Director, Joe Clark, started working at the distillery in September 2016, not long after the first distillations took place. Official employee number 1 (excluding co-founders Dave and Tom), he worked closely with Dr. Jim Swan on our spirit style, recipes and defining how Filey Bay Whisky (at that point, un-named) would taste.

Working in whisky right straight from leaving school, he started at the Whisky Shop in York before heading all over the UK and further afield with the @WhiskyLounge. He's also written a couple of books (though he doesn't like to mention that...!)

When we spoke with Julia from BBC Radio York yesterday she was taken aback by the time frame... "three years! A big gamble to know that it's going to be good!" And she's right, it was a big gamble.

But Tom, Dave, Joe and Jim all said that if you work as hard as possible to use the best equipment, put the best ingredients in, and invest in great knowledge, then you stand the best chance of getting something great out at the end.

A great day showing Yorkshire food royalty chef Steph Moon around the distillery, farm and brewery. Conversations covered everything from angel's share to getting a flat tyre on the York ring road in fancy dress. We introduced Steph to the delicious joy of whisky straight from the cask and why barley is big, bold and bare, and loves chalky soil (and how you can easily identify it from wheat!).

She'll be cooking and MC'ing at both the @GreatYorkshireShow and the @Yorksdalesfest in July, and we'll be there too. So come and say hi to us, and watch her on stage!

After an afternoon talking glass and catching up with Verallier (Allied Glass as was), it felt only right to zoom in on the details of the Filey Bay bottle and take a walk down memory lane to the first run of our bespoke bottle back in 2019 (see picture two..one word – hot!).

The glass embossing brings out the wave pattern that flows across all our whiskies and which has been a part of the distillery's identity in some form since we started. From the shapes on the sand to the shapes on the bottle, a hidden phrase underneath and, of course, our mascot, the gannet.

We work closely with @muntonsmalt and @woldtopbrew (our sister brewery) so that the barley from our farm is ring-fenced for malting. This is how we guarantee that 100% of the malt used for making Filey Bay Whisky comes from our fields and is grown by us.

Today the first loads of barley from harvest 2022 came home (though it’s only been 8 miles away). We have more loads coming over the next few days and soon, it will be used for milling, mashing, brewing and distilling.

As we write this, there are (literally) a handful of bottles of Filey Bay STR Finish Batch #3 left on the website, and about the same on the shelves in the distillery shop. Batch #4 is already in secondary maturation in STR ex-red wine casks in the warehouse but it won't be ready until later in the summer.

This got us thinking about STR casks and Dr. Jim Swan, who really pioneered their use in whisky. From Tel Aviv to Taiwan, wherever you see those casks mentioned, you know that Jim had a hand, somewhere, in that distillery. What a legacy to hold and that's only a part of why he is so well respected around the world.

OK so what does STR mean? A question we're asked a lot.

STR is an abbreviation for shaved, toasted and re-charred and usually applies to ex-red wine casks.

In basic terms, this process does exactly what it says on the tin. Once the red wine has been taken from the cask, the inside is shaved by a couple of millimetres. It’s then toasted with a small fire, followed by a more aggressive fire to ‘re-char’ the cask (basically burning the inside).

Without this process on these ex-red wine casks, there would be a huge influence of deep and bold wine flavours. Shaving the oak tones down these bold flavours introducing a more balanced red wine seasoning.

Why then char the casks if shaving them already reduces the flavours?

The process of toasting and charring removes the intense tannins and brings out the sugars and notes of spice that we see in the end product.

It's Thursday and so time for a look back to Autumn 2021 and the last Single Cask whiskies we released.

#146 and #147 were ex-Oloroso casks from Jerez in Spain. Oloroso sherry is packed full of nutty and rich flavours which really sing when matched with our light and fruity single malt spirit and these two were especially good casks.

"Casks 146 and 147 were filled in the autumn of 2016. They were filled within the same hour on the same day and have spent much of their time in our warehouse maturing side by side.

We’ve always enjoyed their company, drawing the occasional sample to see their progression and, on rare occasions, to share with friends of the distillery. With each passing year it became very clear how special they are, not just because of their rarity, but their individual characteristics and flavour."
