Growing: Wind Power

We’ve talked before about our direct drilling trial which we’re aiming to harvest this weekend but that’s not the only way that we work with natural resources to sustainably make our Filey Bay single malt whisky and the beer at Wold Top Brewery. Co-founder Tom’s long been an advocate of wind power and pushing for sustainable farming methods. That’s the thing about being up on a hill just in-land from the north sea… it’s a fairly rare day when it’s not blowing! He first applied for, and won, planning permission... Read More

Distilling: Ebb and Flow Barrel Aged Beer 2020

Barrel aged beers are a thing of beauty and last year we collaborated with our sister company, The Wold Top Brewery, to release ‘Swell.’  Alex and the team at Wold Top brewed a special recipe, designed to complement the flavours of the casks used for our Maturing Malt Distillery Projects 003 (which was awarded 95/100 by Jim Murray in this year’s whisky bible). The result was the deliciously dark and rich ‘Swell,’ the first in our Ebb and Flow barrel aged series, which came in at 12% and was full... Read More

Together in Spirit: the Wold Top and Spirit of Yorkshire Playlist. 17/04/2020

Enjoying: ‘Together in Spirit’ – our Spotify playlist

We’re big fans of music here at Spirit of Yorkshire, as well as at our sister brewery The Wold Top Brewery. So in lieu of the regular live music at the distillery and brewery (and to give us a really nice way of feeling connected, even though we’re all apart), we’ve compiled a joint playlist of the team’s favourite songs for enjoying a glass (or more…) of something delicious to. Each team member from both Wold Top and SOY has been asked to submit a few songs that they love... Read More

Conventional Drilling at the Spirit of Yorkshire Farm, March 2020 13/04/2020

Growing: Planting our Barley

In the last fortnight we’ve planted all our barley for this summer’s crop (and next year’s whisky). As discussed in our previous post, 130 acres of this have been direct drilled straight into the cover crop that was drilled into the stubble after last year’s harvest. Around 75 acres has been planted conventionally. Here’s a video of Tom talking about direct drilling in more detail (click here to view).

Wind Turbines at the Spirit of Yorkshire Farm 25/02/2020

Growing: Wind Power

Co-founder Tom has long been an advocate of wind power – he first put in an application for a wind turbine in the early 90s but the farm’s proximity to an RAF base meant that it wasn’t feasible to have one then.  Tom kept researching the prospect though and in the late 2000s, T1 and T2 were installed. Between them, they generate 400,000 kw electricity a year and whenever the wind is blowing, they are in motion. When they’re moving, they provide all of the power needed for the farm, brewery... Filey Bay Second Release 24/02/2020

Living: ‘The Country Gent’ Podcast

Last week, Joe joined Nick and Rob from ‘The Country Gent’ podcast for a chat and tasting of Filey Bay Second Release, at the Rose and Crown on Lawrence Street in York.  It’s a detailed session, really drilling down into the specifics of our whisky and our production process, as well as the reasons for starting the distillery, how we work alongside the Wold Top Brewery, and the ethos behind the business. So pour yourself a dram of Filey Bay, then settle down inside and listen here, from around 35... Read More

Living: Countryfile Live

For obvious reasons, we’re big fans of Countryfile here at the Spirit of Yorkshire. And we know that we’re not alone. This week, only Coronation Street, Emmerdale and Poldark had more people watching than Countryfile, a programme dedicated to rural areas – incredible!  Earlier this year, we were really pleased to hear that a northern Countryfile Live was coming to Castle Howard, near Malton, about 30 minutes drive from the distillery. And we were even more pleased when Spirit of Yorkshire and the Wold Top Brewery were asked by the Rural... Read More

Growing: Grow Yorkshire

Both Tom and David, our two co-founders, have agricultural backgrounds and both are passionate about evolving farming to be relevant to today, rather than just doing things because it’s how they’ve always been done. It’s what led Tom to set up the Wold Top Brewery (our sister brewery) in 2003, and what then gave both Tom and David the idea of the Spirit of Yorkshire Distillery a decade later. Grow Yorkshire is a great new initiative focused on inspiring Yorkshire farmers to grow their businesses beyond the usual – they... Read More

Enjoying: The Rugby League International Federation with Welcome to Yorkshire

Last week we were invited by Welcome to Yorkshire, to join them at an event welcoming the Rugby League International Federation to Yorkshire and York. Joe met a delegation of VIPs from the world of Rugby League, and members of the Welcome to Yorkshire team with Distillery Projects 003 and a selection of Wold Top Beers at the beautiful Mansion House in York. According to Joe – “the Samoans really took to our Maturing Malt and Against the Grain went down very well with everyone!”
