Both DP005 & DP006 will be on the shelves from Saturday 3rd of August so you can plan your visit and buy in-store. If you’re travelling especially to purchase these bottles in the days/weeks following the 3rd of August, please bear in mind the limited nature of these releases and call or email us first to check that it’s in stock.
If you were successful purchasing through the online pre-order, your bottles will be ready to collect in store from the 3rd of August. If your pre-order is for delivery you will be notified via email when these are ready for dispatch.

Our Distillery Projects range is all about exploring what our spirit can be. Pre-whisky, we’ve been focusing this on our ‘maturing malt.’ Our first four releases (DPs 001-004) formed a mini-series, which looked at our different cask types, distillation techniques, and how our two spirit styles (pot/column) marry together. Our next two releases are a little bit different and really very special. They’re still ‘maturing malts’ but this time they’re single cask bottlings: one from an STR cask, and one from a Fino cask. We only have a select number of these types of casks filled here at the distillery meaning that these releases are incredibly rare. Furthermore, because they’re single cask, there are significantly fewer bottles than before because of the cask sizes.
Distillery Projects 005 all comes from STR cask number 109, filled in October 2016 and bottled in June 2019, and is 100% pot distilled spirit. It’s a wine barrique with a 220L capacity (which is relatively small, meaning that we’ve only got 544 x 50cl bottles from this cask) and it’s a ‘first fill’ cask, which means that our spirit is the first to fill it since the wine left. We only filled a small number of these STR casks in 2016, so this is a really unique chance to try it.
The cask held Rioja wine for five years. Once the wine was disgorged, the cask was reconditioned by some of the best coopers in Jerez, by shaving, toasting and re-charring (STR) which meant that it has retained much of the fruit-driven flavours from the wine but has also allowed sweetness and spice from the oak to keep shining through. This has led to a cask that delivers a really beautiful and balanced maturation, giving lots of flavour but not overwhelming the character of our spirit. The use of this kind of cask was pioneered by the late Dr. Jim Swan, our consultant and mentor, giving it an extra poignancy.
Tasting note: Soft, floral and sweet with notes of honey, orange chocolate, hazelnut, vanilla buttercream, raspberry sherbet and biscuit.
Because of the nature of single cask bottlings, and the size of the casks used, there are fewer bottles available in each of these releases than 001-004. To that end, we're only making a small number available online, the rest will be on the shelves at the distillery.
Please note: because these releases are single cask, we are releasing them in 50cl bottles, max two per person. Unlike the previous releases they are not individually numbered.
Our standard deliveries are made during normal business hours Monday-Saturday, and will be delivered within 2-3 working days. We do not deliver on Sundays or Bank Holidays.
