Single Malt Whisky - Taiwan
The Yuan Shan distillery was founded in 2005 and upon its completion became Taiwan’s first whisky distillery. The distillery resides in the north-eastern part of the country, in Yilan County and takes its name from the indigenous people of Taiwan, the Kavalan Tribes, that once inhabited the area. Their production process mirrors traditional malt whisky making methods, but due to the challenging heat (c30 degrees all year round) some ingenious techniques have evolved to help control temperatures, arguably paving the way for whisky production in hotter climes. Mainly ex-Bourbon casks are used for maturation but sherry, port and wine casks are also filled. Maturation takes place on-site with the casks being tied together in fours to minimise damage in the event of an earthquake. The high temperatures in Taiwan drive a rapid maturation effect and probably the highest angels-share of any whisky distillery in the world. Around 15% is lost from maturing casks each year which means the whisky cannot be left to mature for long periods time. Like Spirit of Yorkshire, Kavalan worked closely with renown whisky consultant Dr Jim Swan, who played an instrumental part in both distilleries. This release forms part of their core range and has seen further maturation in port casks, imbuing the whisky with a rich, jammy fruitiness.
Tasting note; An incredibly soft whisky with a sweet nose and notes of tropical fruit, honey, pear, and oaky spice on both the palate and finish.
